The Eíriz 100% Iberian Acorn-fed Shoulder with P.D.O. Jabugo is a piece of artisanal excellence, distinguished by its “brida negra” (black label). It comes from pigs raised free-range in the Sierra de Huelva, fed on acorns during the montanera season.
Its natural curing process in Corteconcepción grants it an intense, persistent flavor and an extremely fragrant aroma. Being a smaller cut than the ham, it offers a higher proportion of fat infiltration, resulting in a delicious and melting texture. It is available whole, deboned, or exquisitely hand-sliced, always guaranteeing the highest gastronomic quality.
