Our pastures are located in Castilla-La Mancha, in the Montes Norte region, in Ciudad Real. The acorn is essential in our pigs’ diet, as it provides them with a high content of oleic acid and other healthy fats. It is also rich in vitamin E, making our hams a source of top-quality antioxidants. Our philosophy is based on the premise that the quality of our products begins with the selection of the best pigs.

The climate of Guijuelo offers unique and optimal conditions for curing the ham. This unique climate is one of our main secrets. The long, cold, and dry winters, along with the mountain winds, mean the ham requires less salt for curing and can better express its natural flavor. On the other hand, the hot summers facilitate greater fat infiltration into the meat, resulting in the marbling characteristic of the Guijuelo Designation of Origin. The traceability of our Designation of Origin guarantees the origin of our pieces by complying with the following conditions:
