Jabugo Iberian ham with the Jabugo Designation of Origin is a product that originates in the Sierra de Huelva, specifically in the Sierra de Aracena and Picos de Aroche region, centered on the municipality of Jabugo. Iberian pigs are raised in the dehesa, feeding on acorns and natural resources during the montanera (free-range) period.
Jabugo’s uniqueness lies in its unique microclimate: a combination of humidity and mild temperatures that provides an ideal environment for the natural curing of the ham in traditional cellars and drying rooms. This slow and measured curing process, which can extend for more than five years in some cases, allows for the development of deep aromas and a prolonged, intense flavor.
When cut, Jabugo ham has a dark red color, with shiny, creamy fat. Its texture is sweet and its flavor, complex and full of nuances, makes it a benchmark of the highest Iberian quality, a true reflection of its origin and centuries-old tradition.
