We guarantee the highest quality through our direct presence in all stages of production. As ranchers, the breeding and fattening process takes place in the best pastures of our partners. And as industrial companies, the entire curing process of the product is carried out in our natural drying rooms and cellars.

That’s why our only suppliers are the livestock partners that make up the company, without any third-party products.

From the heart of the Cordoba Dehesa

Encinares del Sur 100% Iberian Bellota Ham D.O. Los Pedroches is born directly in the heart of the Cordoba dehesa. Each piece is protected by the prestigious Los Pedroches Designation of Origin, a seal that guarantees its origin, quality, and authenticity. This ham is not just a food, but the result of a deep respect for tradition and meticulous care at every stage of its production.

Encinares del Sur is proud to control the entire production process, from the cradle to the table. As livestock farmers, they select and raise purebred Iberian pigs in their partners’ best pastures. These animals enjoy a free-range life, feeding on the natural resources offered by the environment, especially acorns during the montanera period. This rich, natural diet is essential for the development of the infiltrated fat that gives the ham its characteristic flavor and texture.

The company also acts as a manufacturer, carrying out the curing process in its own natural drying rooms and cellars, located in the same privileged setting of Los Pedroches. This comprehensive control ensures that each ham evolves slowly, developing its unique, complex aromas and flavors. The curing process, which lasts for months, is carried out with patience and wisdom, following traditional methods that have been passed down from generation to generation.
