Jabugo Designation of Origin (DO)

The geographical area where these 100% Iberian pigs are raised is delimited by the holm oak, cork oak, and gall oak pastures of Badajoz and Cáceres in Extremadura, and Cádiz, Córdoba, Huelva, Málaga, and Seville in Andalusia. This area, known as the dehesa, is an agricultural, livestock, and forest ecosystem of great biodiversity.

The production of DOP Jabugo hams and shoulders is distinguished by their organoleptic qualities, such as their aromatic richness, which are achieved thanks to factors such as the racial purity of the pigs, their exclusive diet of acorns and free-range natural pastures, and the slow curing process in special microclimatic conditions.

The production process begins with the farmer, who cares for the pigs in the dehesa, an ecosystem with high biodiversity. During the montanera period, the pigs are fed ripe acorns and natural pastures before being slaughtered in winter. The master ham maker then handles the salting, washing, drying, and maturing process in the cellars, where humidity and temperature are controlled.

Product certification is guaranteed by strict quality and origin controls carried out by the Regulatory Council, the farmers and processors, as well as the Ministry of Agriculture, Fisheries, and Food. The products are presented in three formats: whole piece, boneless, and sliced.
