Description
Dehesa Maladúa Ham
Dehesa Maladúa, also known as Jamones Ecológicos de Jabugo, S.R.L.U., is a family business that has kept the region’s ham-making tradition alive, standing out for the exceptional quality of its organic products. Its reputation is based on a unique combination of factors that guarantee a ham with unparalleled flavor and texture.
A privileged habitat in the biosphere reserve
The 100% Iberian pigs at Dehesa Maladúa are raised free-range in the heart of the Natural Park, an ecosystem declared a Biosphere Reserve by UNESCO. This environment, composed of holm oak, cork oak, and gall oak pastures, provides an ideal habitat for the pigs’ development and natural diet.
Traditional and organic feed
Our pigs’ diet is based on the natural resources of the pasture: unique pastures, acorns, spring water, and fresh air. This diet, combined with free-range farming, gives the ham its distinctive flavor and aroma.
Artisanal production and natural curing
Dehesa Maladúa products are produced by hand, following traditional techniques passed down from generation to generation. All-natural ingredients are used, with no artificial additives. The curing process takes place in natural drying sheds and cellars, taking advantage of the region’s microclimate and microflora.
