Specifically, these hams are produced in our natural cellar, located in the heart of the Los Pedroches region, where they have rested for more than 45 months until reaching their optimal curing point.
Furthermore, all our hams comply with the Iberian Quality Standard according to Royal Decree 4/2014 of January 10, and in this case, also with the Specifications of the Los Pedroches Designation of Origin approved by the European Union.
In this sense, Los Pedroches is a region in the province of Córdoba, known for producing some of the best acorn-fed Iberian hams in the country, and its designation of origin protects and guarantees the quality and authenticity of the products produced in this region.
Purebred Iberian pigs
Thus, the 100% Iberian Acorn-Fed Ham “Hidalgo de Los Pedroches” comes from purebred Iberian pigs raised in the pastures, where, during the montanera period, the pigs have access to natural pastures and feed primarily on acorns, which contributes to the flavor and quality of the ham.
