Los Pedroches Iberian ham with the Los Pedroches Designation of Origin comes from Iberian pigs raised in the dehesa of the Los Pedroches Valley, in the north of the province of Córdoba. This ecosystem, the largest and best preserved in Europe, is crucial for the pig’s diet, based on acorns during the montanera period, along with natural pastures.
The climate of Los Pedroches, with cold winters and hot, dry summers, directly influences the curing process. This is carried out naturally and slowly in drying sheds and cellars, developing a high-quality product.
Los Pedroches ham is characterized by a mild and delicate flavor, with an intense and persistent aroma, and an aftertaste reminiscent of the sweetness of acorns. When cut, its meat is a bright reddish color, with infiltrated fat, creamy and aromatic. The D.O.P. guarantees the purity of the breed and respect for traditional methods, offering a ham that faithfully reflects its origins and the richness of its environment.
