Julián Martín’s acorn-fed Iberian shoulder hams are a product with an unmistakable and traditional flavor. They come from 100% Iberian pigs, raised free-range and fed acorns and selected feed during the montanera period. This natural diet is essential for developing the unique organoleptic characteristics of each piece.
The production process is artisanal and meticulous, with a slow curing process that extends for a minimum of twenty months in the natural cellars of the Sierra de Guijuelo. During this time, the shoulder matures, acquiring its distinctive texture, aroma, and flavor.
