The 100% Iberian Acorn-Fed Shoulder from Belloterra with D.O. Los Pedroches is a true gastronomic gem. It comes from purebred Iberian pigs, raised free-range in the pastures of the Los Pedroches Valley (Córdoba). These animals are fed exclusively on acorns and natural grasses during the montanera period, consuming between 9 and 11 kg of acorns per day, which is essential for its quality.
This shoulder is characterized by its intense aroma and delicate flavor, with a slightly fibrous texture that melts in the mouth, leaving a lingering acorn aftertaste. Its color varies from pink to bright purple-red, with a pinkish fat infiltration rich in oleic acid, which makes it creamy and enhances its qualities.
The curing process is slow and meticulous, lasting between 20 and 30 months, and even more than two years, in natural drying rooms and underground cellars 5 meters below ground to optimize humidity and temperature. Each piece is numbered, ensuring complete tracking and control. It is a delicacy that combines the excellence of the pastureland with a tradition of artisanal mastery.
