Acorn-fed Iberian Salchichón – Agroibérica de Pozoblanco is a high-quality cured meat that stands out for its mild and delicate flavor. It is made with the finest meat from free-range Iberian pigs raised in the pastures of Los Pedroches, where they feed exclusively on acorns. This natural diet is key to the quality of its meat.
For its preparation, lean meat from acorn-fed Iberian pork is selected and mixed with ground black pepper and other natural spices. Unlike chorizo, salchichón doesn’t contain paprika, allowing the flavor of the acorn-fed Iberian meat to take center stage.
After being stuffed, the salchichón undergoes a slow, natural curing process in the drying sheds of Pozoblanco. This process, which lasts several weeks or months, gives the salchichón its firm texture and characteristic aroma, with notes of pepper and acorns.
