Martín Matas hams are the result of four generations of tradition, based on the premise that “quality is in the natural.” They specialize in high-quality Iberian products with the Guijuelo Protected Designation of Origin. The pigs are raised free-range to infuse fat and flavor, and the pieces are cured for long periods of time, such as 36 months for the acorn-fed ham. The selection of the breed, the freedom of the pig, and the curing time are key to its authentic and harmonious flavor.
