Recently, journalist Óscar Checa, from Origen magazine and Radio 5 (RNE), had the opportunity to explore this route on a press trip organized by the Directorate General of Tourism of Extremadura. During her tour, Checa was able to learn firsthand about the Iberian ham production process, from the raising and feeding of the Iberian pig in the pastures of Monfragüe, to the curing and tasting of this delicacy in renowned drying sheds and restaurants.

The Dehesa: Paradise for the Iberian Pig

The dehesa, a unique ecosystem in the world, is home to the Iberian pig, a native breed of the Iberian Peninsula characterized by its ability to store fat in its muscles, which gives Iberian ham its unparalleled flavor and texture. During her visit to Monfragüe, Checa toured the pastures where the Iberian pigs are raised free-range, feeding on acorns and other natural resources. She was able to witness the care given to these animals, as well as the selection and grading process for the hams.
